INSTRUCTION FOR USE TO PRESERVE YOUR EXCELLENT MOULDS FOR A LONG TIME:
• For ALL moulds:
- Never put it in direct contact with a flame or electric hob.
- GREASE BEFORE EACH USE (even non-stick bakeware).
• TEFLON® coated and NON-STICK : Easier maintenance.
- BEFORE USING FOR THE FIRST TIME: Wash in warm soapy water.
- DO NOT CUT IN THE MOULD nor use metal utensils that could damage the coating.
- CLEANING: NEVER use abrasive pads or scouring powder.
Wash in warm soapy water.

MUST REMAIN GREASED AT ALL TIMES.
You have selected a blue steel mould... this is the start of a lasting love story...
Here are a few tips for making it easier to use:
- BEFORE USING FOR THE FIRST TIME:
Wash carefully in warm water WITHOUT detergent. Dry thoroughly then anneal (heat) in a 200° oven for 1 hour. Allow to cool.
Then to renourish the sheet, use a vegetable fat (not oil) and thoroughly coat the mould taking care to ensure that the steel soaks up the fat properly. (But be careful, some models have fairly thin edges.) Wipe off excess fat with an absorbent paper towel, a thin layer should be enough to protect the mould, before storing in a dry place.
And there you go! Your mould is ready… you'll get to know each other really well…
- EVERY TIME YOU USE, grease it well before lining with pastry.
- AFTER USE, simply wipe. Only wash if necessary (only in warm water WITHOUT detergent), dry thoroughly and regrease. Store in a DRY place.
The blue steel moulds are sensitive to moisture. Breads or other preparations should not be cooled in the mould because condensation will form. If you see rust, rub with a slightly abrasive pad soaked in oil and regrease. (Rust is not toxic.)
- NEVER WASH IN THE DISHWASHER.
Did you know that blue steel moulds are used and recommended by professional bakers? They are very durable and, what's more, blue steel is a top-quality and traditional material.
When well maintained, your professional blue steel mould will improve with use. Its appearance may change but this will not alter its cooking properties at all, it is the sign that it is adopting you and that it will remain your life-long friend... and maybe someday it will belong to your grandchildren...
